Cedar Valley Cheese

Wisconsin Cheese Cedar Valley Cheese began making cheese in 1947. Owner Ralph Hiller and his son, Bill, were the only employees and worked seven days a week processing milk into cheese. In the 1960s, when interest in their American cheese
waned, they partnered with a smaller local Italian cheese maker to produce Italian cheeses such as Mozzarella and Provolone. Cedar Valley’s established reputation helped in selling the new products.
